When you write with a pen, the first Object Menu command is Recognize handwriting.  The four closest guesses are usually listed.  Here, we touched “Recognize @” and converted the doodle to an ampersand.  The Windows version recognizes both printed and cursive text.

Recognize As lets you recognize a word in a foreign language.  Touch Recognize As and then select a language (we chose French), even though we were using Notebook software in English.  The text was deliciously converted to “bon appétit.”  This is a new feature of Windows Notebook 10 software.
